If you’re anything like me, you get overwhelmed every time you step into the beauty and skincare department. With hundreds of products stating thousands of claims – clears acne, brightens skin, provides deep moisture – it’s hard to decipher what products will work best for your skin and give you the results there labels are promising. More times than not, you get home to experiment and find your face irritated by these new products, or worse, showing zero results, leaving you in this state of doubt and wonder if your skin will ever look better. October To-Do List

I swear, the first day of October sneaks up on me every year. And like clockwork, I quickly grab all my flannel, every down vests I own and buy some fresh apple cider at the farmer’s market waiting for the weather to drop (today was still 80 degrees in Pennsylvania!) There’s a lot going on this month, plus our big trip (more details coming soon), but I’m still determined to get these chores and fun activities done before we leave.

Think back to when we were kids – Back to a time when we nagged and nagged our parents if there was a piece of mail waiting for us at the end of each day. A postcard from a friend, a letter (and money) from Grandma or a toy store catalog – we wanted any piece of mail that we can call ours. There was always something so exciting about opening up the mailbox or seeing a delivery truck pull into the driveway. Today, in the age of social media and paperless billing, we rarely receive genuine mail. Day after day I sort our mail only to find solicitor flyers, credit card approvals and down right JUNK mail. Once in a blue moon you’ll find a card from a friend or family member during the holiday season or simply just because. And in that split second, our 20-something self turns into a 5-year-old kid ripping open the envelope at lightning speed to see what’s inside.

Last weekend, I had the privilege of walking in the 2018 American Heart Association Lehigh Valley Heart Walk along thousands of other individuals. Signs plastered around the track promote the American Heart Association’s campaign, asking participants the simple question – Why do you walk? The answer can be anything, but ultimately, life is why.

As I walked around the track, I looked at the individuals around me thinking, “Why are you walking? What is your story? I have a story on why I am here so you must too. ”This question and concept got me literally thinking:

15 Minute Southwestern Taco Bowl

Who’s hungry?! If you read my first post, you know my favorite food is tacos. I’m pretty sure I could eat tacos every night of the week – hard shell, soft shell, taco salad – you name it! But let’s face it, making a taco spread with all the fixings takes a lot of cutting prep and dirties a lot of dishes. This fifteen minute southwestern taco bowl cuts your prep, cooking and cleaning time nearly in half. And, it’s high in protein and low carb. Make a large batch after work and enjoy later in the week for lunch, dinner and even breakfast. Just add an egg and you’ve got a deconstructed breakfast burrito!

More often than not, lists are for groceries, chores, bills – a boring to do list we dread completing every week. Why can’t we create to do lists that include goals, actions and bucket list items. We shouldn’t have to hold ourselves accountable for having fun, but as responsibilities add up, our “me moments” can be forgotten.
